Cinco de Mayo Meal: Mexican Chocolate Rice Krispie Treats

With all of this eating, we don’t really need a dessert but we wanted one to finish out the meal, so it needed to be light and easy.  How about Mexican Chocolate Rice Krispie Treats!  To call these Mexican Chocolate is a BIT of a stretch, but it comes from the addition of cinnamon to the chocolate treats.  Whatever you call them, they’re muy bueno!  I’m not usually a huge fan of Rice Krispie Treats, but I have to say the chocolate/cinnamon/vanilla aroma from these enticed me and I tried one.  They were so darn good!  Make these!

Mexican Chocolate Rice Krispie Treats
(adapted from Cooks.com)

1/4 cup butter
Dash of salt
1 10-oz pkg regular marshmallows
1 tsp cinnamon
1 tsp Mexican vanilla
5 1/2 cups Cocoa Krispies cereal
1 cup pecans, chopped
1/2 cup mini semi-sweet chocolate chips

Butter a 9 x 13 pan, or line with non-stick foil.

Melt butter in a large pan over low heat.  Add marshmallows, and stir until melted.  Remove from heat and stir in a dash of salt, the cinnamon and vanilla.  Add cereal and pecans.  Stir well and quickly.

Firmly press mixture into prepared pan.  Immediately sprinkle chocolate chips over the surface.  Cool and cut into squares.

Cinco de Mayo Meal: Spinach Mushroom Enchiladas

Bobby Flay’s Goat Cheese Enchiladas are on my Cooking Bucket List, and I thought about making them for Cinco de Mayo but didn’t really want to go the high-fat route right now, since I ate more than usual on vacation and I’m trying to get back to my more disciplined way of eating.  So I compromised.  I made my version of Bobby’s enchilada sauce, but instead of cheese enchiladas, I made spinach mushroom enchiladas with whole grain tortillas.  They aren’t totally guilt-free since I’m still using a moderate amount of cheese (what would enchiladas BE without cheese?), but it’s all about balance, right? If you want to go totally vegan and healthy, use agave nectar instead of the honey and eliminate the cheese altogether or use a non-dairy cheese.  If you have a non-dairy cheese that you love, please let me know about it!

I made the sauce a day in advance, and would recommend that since it takes a little while.  Plus, the flavor has a chance to develop overnight, and just makes it even better.  This sauce takes some doing, but I think it’s worth it.  It’s really delicious and has great depth to it.  Make sure that you use the Mexican oregano, not the usual Turkish oregano that you might have for Italian cooking.  The Mexican variety is not as sweet, and works great with the smoky cumin.  You can get a small jar of it at Penzeys for $1.49, so try to find it if you can.  You might be able to get it at the Latin foods market, which is where I found my dried ancho chiles.

Enchilada Sauce
(adapted from Bobby Flay’s Red Chile-Tomato Sauce)

3 ancho chiles
3 Tblsp vegetable oil
1/2 large red onion, chopped
3 cloves garlic, pressed
1 Tblsp ground cumin
1 Tblsp Mexican oregano
1 28-oz can crushed fire roasted tomatoes
4 cups vegetable stock
1 to 2 Tblsp honey
Salt and pepper to taste

Microwave 2 cups of water to boiling point, and carefully pour over ancho chiles in small bowl. Let soften for 30 minutes. Remove stems and seeds from chiles and puree in food processor or blender.

In a large saucepan or dutch oven, saute the onion in vegetable oil over medium heat until soft. Add crushed garlic and cook for 1 minute. Add cumin and oregano and cook for 1 minute. Add ancho puree and cook for 2 minutes. Add tomatoes and stock and simmer for 30 minutes. Season with salt, pepper and honey to taste. Leave chunky or use an immersion blender for a smoother consistency. This recipe makes a large quantity, so you may want to freeze what you don’t use in this batch of enchiladas. Just don’t let it go to waste!

Spinach Mushroom Enchiladas

1 Tblsp butter
1/2 large red onion, chopped
3 garlic cloves, pressed
1-1/2 lb mushrooms, wiped clean and chopped
8 cups (packed) fresh baby spinach
Salt, pepper and Frank’s Red Hot sauce to taste
1-1/2 cups shredded cheese of your choice (I used a mixture of monterrey jack and mexican blend cheeses)
8 multi-grain tortillas
2 cups Enchilada Sauce
Cotija cheese for garnish, optional

Melt butter in a large saute pan over medium heat.  Add onions, garlic and mushrooms and cook until they are soft and liquid has evaporated.  Add the spinach and cook until spinach is wilted and liquid has evaporated again.  Add salt, pepper and Frank’s Red Hot to taste.  Mix in one cup of the shredded cheese.

Place 1/2 cup enchilada sauce in bottom of 9 x 13 pan.  Wrap the tortillas in a damp paper towel and microwave for a few seconds until softened enough to roll.  Place a generous 1/4 cup of the spinach mushroom filling into the center of a tortilla and roll up.  Place in the pan, and repeat until all tortillas are filled, snuggling them in tightly.  Cover with remaining 1-1/2 cups of enchilada sauce, and sprinkle with the rest of the cheese.

Bake at 350 degrees until bubbly throughout and cheese is melted, about 30-35 minutes.  Serve with a sprinkle of cotija cheese if desired.

Cinco de Mayo Meal: Guacamole

You can’t have a Cinco de Mayo meal without guacamole, or any mexican meal, for that matter. LilSis and I make our guacamole pretty much the same way, and it’s super simple. We don’t like onion in our guac since it dominates the flavor, and we don’t like tomato since it gets yukky and watery if there’s any left over. We do like lots of lemon and garlic! The extra lemon will help keep the guac from getting too brown, besides giving it a great bright flavor  Here’s how we do it.

Super Simple Guacamole

3 avocados
Juice of 1 to 1-1/2 lemons (at least 4 tablespoons of juice)
1/2 tsp lemon pepper
1/2 tsp shallot pepper (or plain pepper if that’s what you have)
1/2 tsp minced dried garlic or garlic powder
1/2 tsp salt
1 tsp Frank’s Red Hot Sauce

Mash avocados with all other ingredients. Adjust seasonings to your taste.  Refrigerate any leftovers, with plastic wrap placed directly on the surface of the guacamole to keep air out and reduce browning.  Enjoy!

Hola!  Cinco de Mayo is just around the corner, so oh darn, LilSis and I have an excuse to make Mexican food.  Our favorite!  With one sister in California and one in Texas, you KNOW we love our Mexican food!  The swine flu has postponed or cancelled the Cinco de Mayo festivities here in Texas, so it’s a good thing that we have our own throwdown fiesta planned!

It’s Hairball Time!

(I think BigSis is trying to get back at me because she thought the YouTube video was crude that I posted once with the 80s workout queen farting throughout her entire workout.) I have a weak stomach and never would have been able to take these photos. So, with that said, continue reading this post at your own risk…

You read that right. I didn’t say “Hammer Time”. I said “Hairball Time”. If you have cats you know exactly what I mean. The weather is warming up and that means only one thing…shedding and lots of it! And shedding means hairballs, no matter how much I brush these guys. This time of the year, it’s commonplace for me to come home from work and find a little “present” on the carpet waiting for me.

When this happens, I could start looking for a company offering carpet cleaning services near me. Sometimes, if the stain is particularly large or dark, this is the best course of action. But if it is only small, or light in colour, I can usually deal with it myself. That being said, occasional visits from a carpet cleaning company will do your carpets the world of good.

Even though my carpet is new and light in color, I don’t freak out. If I’m gifted with hairball barf, I let it sit and get dry and crunchy. Sorry to be graphic, but that’s the best way to clean it up in my experience, and if there’s one thing I have massive experience with, it’s the gross things that come out of cats!! I’ve seen two very elderly cats through kidney failure to the end, so there isn’t much that turns my stomach when it comes to cats. I’ve learned to breathe through my mouth and to go to the happy place in my head. Nuff said. 😉

I talked before about how to clear up cat urine odor and also my magic potion for barfage and poopage. I really wanted to share some before and after photos from this week’s Hairball Fest, just so you could see that my potion works and there is hope for your carpet if you’re in the mist of Hairball Time!

But when LilSis heard I was doing this post, she said: “NO!! SAY IT AINT SO!!” She isn’t down with this topic, so out of respect for her and her sensitive stomach, let me add a warning. French Pastry Bon Voyage

My friend SAA left for an awesome trip to France this week for a wedding.  The bride is Cambodian and the groom is German, so of course they’re getting married in Paris! Can you imagine a more unique wedding ceremony?  I can’t wait to see the pictures.

I don’t need much reason to bake, so to wish SAA bon voyage, I made a pastry called Danish Puff.  It’s essentially pate a choux, a dough that is used to make beignets, cream puffs and eclairs.  Not that I could compete with French pastry; I just thought this was an appropriate adios treat, or should I say au revoir treat!  I got this recipe from a coworker almost 20 years ago and I still love it.  You’ll notice there isn’t any sugar in the whole recipe except for the glaze, which I really like.  It’s easier than the results might indicate, so just pretend you slaved all day on this dessert!  Let’s make this baby!

Besides being easy, this recipe is cheap.  These are all the ingredients you’ll need.

Danish Puff

Pastry:
1 cup all-purpose flour
1/2 cup butter, softened
2 tablespoons water

Topping:
1/2 cup butter
1 cup water
1 teaspoon almond extract
1 cup all-purpose flour
3 eggs

Glaze:
1-1/2 cups powdered sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
1 to 3 tablespoons warm water
3/4 cup sliced almonds, toasted

Preheat the oven to 350 degrees F (175 degrees C).

For the pastry, cut the butter into flour using 2 knives or a pastry blender. Sprinkle 2 tablespoons of water over, and stir with a fork until dough comes together. Divide into two balls. Pat dough into two long strips on an ungreased baking sheet, about 12 inches long and 3 inches wide.  Strips should be around 3 inches apart.  Set aside.

In a medium saucepan, heat the butter and water to a rolling boil. Remove from heat and add almond extract and flour.  Stir vigorously over low heat for about 1 minute, until the mixture forms a ball. Beat in the eggs (all at once) until smooth and glossy. Divide in half and spread over the strips on the baking sheet.

Bake for about 1 hour, or until topping is brown and crisp.

Cool. Topping will shrink and fall, forming the custardy top of the puff.

Mix all glaze ingredients together with an electric mixer until smooth, adding water by tablespoons until a good spreading consistency is achieved.  Frost the puffs and sprinkle with the almonds.

Money Saving Tip: Buy Produce at Sam’s Club

I got home from California to find hairballs on the carpet, but I found ZERO food in the house.  You know how you try to let your perishables all run out before you leave for on vacation?  That’s what I did, which makes sense, but I haven’t had anything to eat for dinner all week except random crackers, string cheese and scrambled eggs.  Sad, huh?

So tonight on the way home from work I stopped at Sam’s Club for a few things.  Did you know that you can get some great deals on produce there?  The first time I seriously browsed their produce department I was shocked.  I guess I expected to find tired old stuff that was past it’s prime, but I’ve never seen that to be the case.  I do find great deals and good quality.

Here’s what I got tonight for under $35.

  • Baby spinach – beautiful tiny leaves, triple washed (1 lb)
  • Shredded romaine – triple washed (2 lbs)
  • Whole button mushrooms (1-1/2 lbs)
  • Cherub grape tomatoes (2 lbs)
  • Avocados – a perfectly ripe bag of 5
  • Frozen sliced strawberries for smoothies (5 lbs)
  • Frozen tiny broccoli florets, not the hard yukky stems (4 lbs)

That’s a heck of a lot of food that will make me salads, sides and smoothies for at least a week. If I’d picked that all up at a regular grocery store, I would have expected to pay more than double that price.  The strawberries alone would have cost me more than half of that total amount.  Target has a 12 ounce bag of berries on sale for $3, so 5 pounds at that rate would be $20.  I got 5 pounds for $8.76!  Sam’s also had some gorgeous phaleonopsis orchids, geraniums and ferns today – all at fabulous prices!

The next time you’re at Sam’s Club picking up a prescription or waiting for your new tires to be put on, wander through the produce department.  You might be pleasantly surprised to save some money on your family’s food bill! Oh, and you get 30% off on all the magazines they carry, and you KNOW how LilSis and I love magazines!   If you’ve saved some dough on your food, you can justify a magazine or two!

Can you work aqua and pearlescent eyeliner?

Before we move on to another topic, we’ll leave you with one more post on eyes.  If you could find effective treatment products for puffiness, dark circles and crows feet, what would be the next step?  I would say it’s finding the right makeup application method and colors for your eyes, your face and your style.  It can be tricky, and can take some trial and error.  If you’re in doubt and need another opinion, take advantage of the expertise of makeup artists at your favorite makeup counter.  You know by now that LilSis and I head for the MAC counter, where they have some fabulous MUAs who can help you.  You can even get a free makeup application from the MAC gurus if you make an appointment ahead of time.  I’ve been at the counter on a Saturday afternoon when a bride has come in – complete with veil and fancy updo – for her wedding MU application.

One person who has definitely found a look that suits her and looks gorgeous is Gala Darling of Icing fame.  I’m not sure that I could get away with aqua eyeliner (definitely not during the workday), but Gala not only makes it work but makes it her unique beautiful style.

Face Lift WrinkleFree Eyes Review

When I was in Californie last week, LilSis and I were wandering around SuperTarget in search of the Garnier Nutrioniste Anti-Puff Eye Roller.  We found that, plus this other intriguing product that neither of us had heard of.  It’s made by University Medical and is called Face Lift WrinkleFree Eyes.  The package screams that it’s a “20 Minute Botox” treatment!  Of course, we bought into the marketing strategy…hook, line and wrinkle.  Yep, we forked over our $30 and bought it.

Here’s what you get in the 2-week starter kit, according to the manufacturer’s web site:

Includes 2 sets of MICRO-CHARGED EYE PATCHES with Retinol 4X™ Activating Creams – each patch treatment reduces the look of wrinkles in only 20 Minutes & lasts up to a week. The kit also includes daily treatments of Retinol 4X™ Intensive Cream (for nighttime use) and 24 Hour Face Lift™ (daytime use) to maintain your results between patches.

Since I had to get back to Texas and my real life – ding dang it – LilSis and I split up the kit and each took half the ingredients to try.  I did my first treatment tonight. I tried the eye patches first.  You smear the retinol product on each patch, apply to your under eye area, and leave it for 20 minutes.  The patches are supposed to be “micro-charged” to deliver the retinol product to the skin more effectively.  That may be malarkey, but it sounds good, right?  I was a little nervous about applying a retinol product that close to my eyeballs, but I was very careful not to get any in my eyes.  The patches felt a tad bit tingly, and my eye area might have felt a little twitchy, but then again it may have been my crazy wild imagination because of the “micro-charged” claim.

After 20 minutes, I removed the patches and cautiously rinsed off the remaining product.  There was a tiny bit of irritation, but I really think it was from the adhesive stuff on that tender skin more than it was from the retinol.  The under eye skin did FEEL a bit softer, but did it look smoother?  Did the crows feet look softened?  Did the fine lines appear to be lessened?  Did I look as though I’d had Botox (which I’ve never had, so I don’t really have an educated basis for comparison)?  Ehhhhh…maybe a little bit??  I can’t really say yes to any of those questions.  Yet.

There are two other products in the kit.  One is a nighttime retinol product and the other is a daytime line filler.  I don’t want to go crazy and use all 3 in one fell swoop in case there’s a reaction of some negative kind, so I’m going to wait and try the retinol nighttime product tomorrow night and hollah back when I can give the system a thumbs up or thumbs down.

Garnier Nutrioniste Anti-Puff Eye Roller: Part 2

Well, LilSis, I have to say that I’m ambivalent about the Anti-Puff Eye Roller at this point.  I liked how the roller ball felt on my under eye area.  It was cool and felt kind of soothing.  The fluid or serum or whatever you call it didn’t irritate my eyes in the least, which is a really good thing.  I don’t have anything negative to say about it, and the price is excellent.

The Garnier web site says that the eye roller works based on this premise:

Caffeine decongests puffiness and diminishes dark circles
Pro-Vitamin B5 refreshes and hydrates the delicate eye area

Since we’ve seen that caffeine can be an effective ingredient in anti-cellulite products, in theory this product should work.  To be completely honest though, I just didn’t really notice any reduction in puffiness.  We DID have a lot of Mexican food and pizza a couple of times plus Big T’s yummy pita chips, so this may not have been a fair trial for this product.  If you continue to see results, LilSis, I may buy myself one to try under normal circumstances…when I’m not consuming massive quantities of salt!

On the Sister Scale, I’m giving this product 6 out of 10 points, but I’m reserving the right to revisit my review!  What other eye products do we have to talk about, LilSis?
